The Shinwari Afghans, well known for their culinary skills, come from a region famed for its karahi and barbecued meats. One celebrated dish from the region is (SHINWARI) Karahi. Karahi (a heavy-based, deep cooking wok). Slow cooking and minimum use of ingredients gives this historical dish its authentic flavors. And that's what we decided to go and try at one of the most famous places in lahore at a location called Truck ada. This place literally blew my mind by looking at the cooking concept. They had at-least 15 built clay ovens stuffed with fire wood and then topped with these medium sized steel woks that all had some sort of shinwari cooking in them basically its a lamb stew thats cooked in its own fat rather then oil with chopped tomatoes, cumin, green chillies, corn peppers, yogurt, cream and turmeric powder. it cooked for at least one to one and half hour till the meat falls off the bone, the flavor is so rich and buttery due to the lamb fat that its cooked in. its definitely not a dish for weight watchers lol and then the Peshwari bbq which consisted of lamb chops that were so moist and succulent and just marinated with salt and pepper to avoid talking the lamb flavor away which westerners are not use to.
Loved everything about their food especially their afghan clay oven baked bread/Roti that was so delicious once dipped into that buttery meat sauce. Then we executed the meal with the famous Kawa basically the Afghan green tea which help with the digestion of that rich heavy food we had.
